There’s something about a sheet pan dinner that makes getting dinner on the table feel so much easier. This Chicken Sausage and Butternut Squash Sheet Pan combines a few flavorful ingredients in an easy way to get a meal on the table!
Apple chicken sausage, butternut squash, broccoli, red onion, and apples with warm fall spices brings together a cozy dinner that requires minimal prep and cleanup. PLUS it has a good dose of fiber in each serving to help you manage your glucose! Which is so helpful when you have prediabetes.
This chicken sausage and butternut squash sheet pan is savory, slightly sweet, and full of those flavors that make you want to pull out your sweaters and light a candle, without spending an hour in the kitchen.
And the best part? Everything gets mixed in one bowl and baked together at once!
Why You’ll Love This Fall Sheet Pan Dinner
This recipe checks a lot of boxes for a busy weeknight.
It’s:
- Easy to prepare
- Made with simple grocery-store ingredients
- Full of fall flavors
- A great way to use seasonal produce
- Packed with a variety of foods
- Easy to customize
- Made on one sheet pan for minimal cleanup
I also love that this recipe uses frozen butternut squash.
Fresh squash is delicious and definitely ups the fiber content of your meal. But let’s be honest: cutting and peeling a whole butternut squash can be a project. Using frozen squash makes this dinner much more approachable for a busy weeknight.
There’s nothing wrong with taking a shortcut when it helps you actually get dinner on the table with nutrient-dense ingredients!

Worried About Starchy Vegetables?
This Chicken Sausage and Butternut Squash Sheet Pan recipe includes butternut squash, which is a starchy vegetable. Starchy vegetables are a source of carbohydrates, but that doesn’t mean you need to avoid them! Even when you have prediabetes or are watching your glucose levels. In fact, starchy vegetables are typically very nutrient-dense and provide our bodies with much needed vitamins, minerals, and fiber for better glucose management!

The Perfect Combination of Sweet and Savory in This Chicken Sausage and Butternut Squash Sheet Pan!
One of my favorite things about this recipe is the combination of sweet and savory flavors.
The apple chicken sausage brings a savory, slightly sweet flavor, while the apples add a little more natural sweetness as they roast.
Butternut squash brings another layer of sweetness, while broccoli and red onion balance everything out with savory flavors.
Then you have cinnamon, sage, garlic powder, and smoked paprika tying it all together.
It might sound like a lot of different flavors going on, but they work surprisingly well together.
The apples and squash become tender and caramelized in the oven, while the sausage gets those delicious browned edges. The result is a cozy meal that tastes like fall without relying on complicated ingredients.
A Balanced Dinner Without a Complicated Meal Plan
One thing I love about sheet pan dinners is how easy it is to build a balanced meal.
This recipe includes protein from the chicken sausage, carbohydrates and fiber from the squash and apples, and plenty of non-starchy vegetables with the broccoli and onion pieces.
You also get fat from the oil used to roast everything.
This is a great example of what balanced eating can look like in real life.
You don’t need to measure every ingredient or create a perfectly portioned meal. You can simply build a meal around a combination of foods that provides different nutrients and flavors.
And if you want to add something alongside this meal, a simple side salad or another favorite vegetable would work beautifully.
Don’t Be Afraid of Carbohydrates
I know carbohydrates are something many people with prediabetes think about when planning meals.
But foods like butternut squash and apples can absolutely be part of a balanced meal.
Instead of focusing on eliminating carbohydrates, I like to look at the meal as a whole.
Here, the carbohydrate-containing foods are paired with protein, fat, fiber, and non-starchy vegetables. That combination makes for a satisfying meal while allowing you to enjoy foods you actually like.
You don’t have to avoid squash or apples just because they contain carbohydrates.
Balance is about what you add to your meal, not just what you take away.
Tips for Making This Chicken Sausage and Butternut Squash Sheet Pan
Use frozen butternut squash
This is one of my favorite shortcuts in this recipe. There’s no peeling, cutting, or wrestling with a whole squash!
You can keep a bag of frozen butternut squash in the freezer and have it ready whenever you want an easy fall-inspired meal.
Cut everything into similar-sized pieces
Try to keep the broccoli pieces on the smaller side and the onion and apples in relatively similarly sized chunks so everything cooks more evenly.
You don’t need to be perfect, but very large pieces of one ingredient and very small pieces of another can lead to some foods being overcooked while others are still firm.
Don’t overcrowd your pan
Give your ingredients some room to roast.
If everything is packed tightly onto the pan, the vegetables are more likely to steam rather than roast. A little space helps you get those browned, caramelized edges that make sheet pan dinners so good. This is why I recommend using two sheet pans for this meal.
Choose your favorite sausage for chicken sausage and butternut squash sheet pan dinner
Apple chicken sausage works especially well here because it complements the apples and warm spices.
But if you have another variety of chicken or turkey sausage you love, feel free to experiment!
Can I Use Fresh Butternut Squash?
Absolutely!
Frozen squash is used here primarily for convenience, but fresh butternut squash can work, too.
Just peel and cut it into bite-sized pieces before adding it to the sheet pan.
And if you’re short on time, frozen squash is one of those little kitchen shortcuts that can make a big difference. Healthy, balanced meals don’t have to start with everything being made from scratch.
An Easy Fall Dinner for Busy Nights: Chicken Sausage and Butternut Squash Sheet Pan
Fall recipes don’t have to mean complicated soups, casseroles that take hours, or spending your entire evening in the kitchen.
Sometimes you just need a sheet pan, a few simple ingredients, and some good spices.
This Chicken Sausage and Butternut Squash Sheet Pan is exactly that.
It’s cozy enough for a chilly fall evening but simple enough to make on a busy weeknight. Plus, with protein, carbohydrates, fiber, and plenty of vegetables all in one meal, it’s a delicious example of how easy balanced eating can be.
Easy dinner, minimal dishes, lots of fall flavor. Sounds like a win to me!
