When summer hits, heavy meals can feel like too much. That’s where these Turkey and Avocado Lettuce Wraps come in. They’re light, refreshing, satisfying, and packed with the kind of balance that can help support steadier glucose without sacrificing flavor. Plus, they are SO quick to make and very versatile, if you’re running low on ingredients or need to make a swap!
If you’re looking for an easy lunch or quick dinner that feels fresh and simple, this recipe checks all the boxes. Lean turkey provides protein to help keep you fuller longer, while avocado adds healthy fats that can support satisfaction and help slow digestion. Wrapped in crisp lettuce instead of traditional bread or tortillas, these wraps are a lower-carb option that still feels delicious and filling.
One of the best things about meals like this is how simple they are to customize. Add crunchy veggies like cucumbers, shredded carrots, or bell peppers for extra fiber and texture. Top with salsa, a squeeze of lime, or a Greek yogurt-based sauce for even more summer flavor.
For those focused on managing prediabetes, meals built with protein, fiber, and healthy fats can be a helpful strategy for supporting more balanced glucose levels.

Turkey and Avocado Lettuce Wraps
Ingredients
Equipment
Method
- Lay out lettuce leaves side-by-side on wax paper, overlapping each by about 1/3 of the leaf width. If you have any holes or cut-out sections of leaves, alternate the orientation of the leaves to have the holes covered.
- Spread hummus along 1-2 leaves, lengthwise. Leave part of the first leaf bare to help with wrapping.
- Layer provolone slices, turkey, avocado, tomato, and onion, covering about 2/3 of the lettuce leaves. Be sure to leave some space at the end for wrapping.
- Roll up, using the wax paper to hold everything tightly together. Cut in half and remove wax paper before eating.
Notes
Notes for Turkey and Avocado Lettuce Wraps
If you don’t have cooked turkey laying around, you can substitute leftover grilled chicken, rotisserie chicken, drained canned tuna or salmon, or no-salt-added canned chickpeas!
Don’t like tomato and onions? Try crunchy shredded carrots, sliced bell peppers, or the bagged coleslaw mix! Endless options!
Wary of the hummus? You could try a quick Greek yogurt dip with 1/4 cup plain Greek yogurt + a little garlic powder, onion powder, or whatever seasonings you enjoy! (Many people enjoy everything but the bagel seasoning on this wrap!)
If you’re sticking with a very light (and no cook) lunch, try adding some sliced apples with unsweetened peanut butter, a fresh peach over some plain Greek yogurt, or even a handful of roasted nuts! These options add more filling protein and fiber and a lot of great flavor!
