Method
- Lay out lettuce leaves side-by-side on wax paper, overlapping each by about 1/3 of the leaf width. If you have any holes or cut-out sections of leaves, alternate the orientation of the leaves to have the holes covered.
- Spread hummus along 1-2 leaves, lengthwise. Leave part of the first leaf bare to help with wrapping.
- Layer provolone slices, turkey, avocado, tomato, and onion, covering about 2/3 of the lettuce leaves. Be sure to leave some space at the end for wrapping.
- Roll up, using the wax paper to hold everything tightly together. Cut in half and remove wax paper before eating.
Notes
If you can't get the lettuce to hold together, consider trying green leaf or larger lettuce leaves. You can also build this into a filling salad if desired!
This recipe uses already cooked turkey breast tenderloin slices. If you don't have turkey, you could easily substitute with leftover cooked chicken slices!
Don't have wax paper or don't like waste? You can roll without it or try using a silicone baking mat, but you have to remove before cutting, which means it will be a bit harder to cut!
