Because you know what? Glucose-friendly dinners do not have to be complicated, bland, or time-consuming! In fact, they shouldn’t be! Because the more complicated, bland, or time-consuming they are, the less likely you are to be successful with managing your glucose in the long run!

Here are realistic dinner ideas that don’t require complicated recipes:

1. Sheet Pan Chicken + Roasted Veggies + Sweet Potato

Minimal prep, easy cleanup, and balanced nutrition. Try mixing in a little garlic, cayenne, and just a pinch of cinnamon on those sweet potatoes to really make that flavor pop!

2. Taco Bowl Night

Lean ground turkey or beef + black beans + fajita veggies + avocado + salsa over cauliflower rice or a serving of brown rice. Adding plain Greek yogurt in place of sour cream will add even more filling protein and some gut-friendly probiotics as well! (Just be sure the container says “contains live and active cultures”.)

3. Air Fryer Salmon + Green Beans + Quinoa

Simple, quick, and packed with protein and fiber. Try adding a glaze made with a small bit of maple syrup along with dijon mustard and some rosemary! Add a little lemon juice if you want a thinner glaze. Tons of flavor and the tiny bit of maple syrup (about 1/2 tsp per serving of fish) gives a really nice sweetness without being overpowering.

4. Stir Fry Made Easy

Chicken, shrimp, or tofu + frozen stir fry veggies + brown rice + lower sugar sauce. Sometimes even just making your own quick sauce with a little soy sauce or coconut aminos, ginger, garlic, and sesame oil is even easier than a bottle and you’ll know exactly what’s in it! 5. Burger Bowl

Burger patty + a few small roasted baby potatoes + lettuce + tomato + onion + pickles + avocado for all the flavor without feeling restrictive. Try mixing together a quick sauce with light mayo, mustard, and a dab of ketchup mixed with some chopped up pickle to make it really feel like you went to your favorite burger joint tonight! This is one of my favorite Saturday night meals!

6. Slow Cooker Chili

Lean protein + beans + vegetables = easy meal prep win. Have a random can of pumpkin puree in your pantry that you didn’t use last Thanksgiving? Throw it into that pot! It’s an awesome chili thickener and usually nobody knows what that subtle sweet note is from but they find it addicting!

7. Breakfast for Dinner

Egg scramble + veggies + turkey sausage + whole grain toast. Having breakfast for dinner just makes me smile! It’s seriously one of my favorite simple prediabetes dinners because it’s a win-win in my opinion. I get my favorite foods twice that day and it’s easy too! Mix in yesterday’s leftover roasted veggies into your egg scramble to really bulk them up!

Common Dinner Mistakes That May Spike Glucose

Sometimes it’s not the meal itself, but rather what’s missing.

Examples:

  • Pasta without protein
  • Pizza with more pizza
  • Takeout heavy in refined carbs like rice or fries
  • Skipping the non-starchy veggies
  • Large portions of rice without balance

This doesn’t mean you can’t enjoy these foods. It often just means pairing them better.

Examples:

Instead of: Large bowl of regular pasta with sauce

Try: Protein or legume pasta with roasted veggies + tomato sauce + cannellini beans + side salad

Instead of: Bowl of rice topped with general Tso chicken

Try: 1/2 cup rice + cauliflower rice + general Tso chicken made with lower sugar sauce and veggie stir-fry

    I absolutely love a good burger. I usually have them bunless but the bowl sounds yummy!!!! Thank you!!!
