If you’re looking for an easy lunch that feels a little more exciting than your usual sandwich, this open-faced Apple Chickpea Salad Melt is one to add to your fall rotation.

It has that perfect combination of creamy, savory chickpea salad with a little sweetness and crunch from apple, all piled onto bread and toasted until warm and melty. Basically, it’s everything I want in a cozy fall lunch easy, satisfying, and full of flavor.

And while chickpea salad is something you can enjoy year-round, adding crisp apple and sage makes this version feel especially fitting for the fall season.

Why You’ll Love This Apple Chickpea Salad Melt

There are plenty of reasons this sandwich has become a favorite, but let’s start with how easy it is.

Chickpeas are a great pantry staple to keep on hand because they can quickly turn into a filling lunch without much cooking. They also provide fiber and plant-based protein, making them a great addition to a balanced meal.

Then there’s the apple.

The crisp apple adds a touch of natural sweetness and a little crunch that pairs surprisingly well with the savory chickpea mixture. It’s one of those combinations that sounds slightly unexpected until you try it, and then you wonder why you haven’t been putting apple in your chickpea salad all along! Turning it into a melt takes it to another level.

Warm, toasted bread + creamy chickpea salad + melted cheese = a lunch that feels a little more special than your standard sandwich.

A Simple Way to Enjoy More Plant-Based Meals

You don’t have to completely overhaul the way you eat to include more plant-based foods. Sometimes it can be as simple as swapping a traditional sandwich filling for chickpeas.

Chickpeas are an easy way to add fiber, carbohydrates, and plant-based protein to a meal. Because they’re so versatile, they can be used in everything from salads and soups to sandwiches and snack recipes.

I also love meals like this because they don’t require you to choose between carbs and a satisfying meal. The bread provides carbohydrates for energy, while the chickpeas, cheese, and other ingredients add protein, fiber, and fat. That combination can help create a more balanced and satisfying meal.

The Fall Ingredient You Might Not Expect

When you think of fall recipes, you probably think of things like apples, pumpkin, squash, and warm spices. But apples don’t have to be reserved for breakfast or dessert! They can be a fantastic addition to savory meals, too. Their natural sweetness works especially well with salty and savory ingredients, and the crunch adds some much-needed texture. That’s exactly what they do in this chickpea salad melt.

If you have some apples sitting in your kitchen after an apple-picking trip or a grocery store run, this is a delicious way to use them beyond simply eating them as a snack.

How to Make This a Balanced Lunch

One of my favorite things about this recipe is that it already has many of the components I look for in a satisfying meal.

You have:

  • Carbohydrates from the bread, and chickpeas
  • Fiber from the chickpeas and apple
  • Protein from the chickpeas and cheese
  • Fat from the cheese and chickpea salad ingredients
  • Fruit from the apple

You can easily round out the meal with a side of non-starchy vegetables, a simple salad, or some fresh fruit.

Remember, a balanced meal doesn’t have to be complicated. You don’t need a perfect combination of foods or a complicated meal plan. Sometimes balance looks like a really good sandwich and something crunchy on the side.

Worried About the Bread?

Bread can fit into a well-balanced meal, even when you’re watching your glucose. Choosing whole grain varieties usually yields the best glucose results, but sourdough has its perks too. Sourdough undergoes a fermentation process which, when done appropriately, can lead to the production of resistant starch. This resistant starch isn’t broken down into glucose and helps our gut health as well. In the long-run, including resistant starch from a variety of foods can help us manage our glucose better.

Make It Your Own

One of the best things about chickpea salad is how easy it is to customize.

You can play around with different types of apples depending on whether you prefer something sweet or tart. You could also experiment with different cheeses to change the flavor of the melt.

And if you’re making this for the whole family, everyone can add their own favorite toppings or sides.

That’s my favorite kind of recipe! Simple enough for a weekday, but good enough that you actually look forward to eating it.

Your New Fall Lunch?

If you’re tired of making the same lunch on repeat, give this Apple Chickpea Salad Melt a try.

It’s cozy without being complicated, has plenty of flavor and texture, and is a great reminder that balanced eating doesn’t have to mean boring meals or giving up the foods you love.

So grab an apple, a can of chickpeas, and your favorite bread, and make yourself a fall-inspired lunch.

Because fall is a pretty great excuse to put apples in basically everything.
