Asian Lettuce Wraps

Ingredients
  

  • 1 1/2 lbs lean ground chicken, pork, or turkey
  • 2 large bell peppers chopped
  • 8 oz mushrooms raw, chopped
  • 1 medium onion chopped
  • 1 tsp freshly minced ginger
  • 1 tsp minced garlic
  • 1/4 cup low sodium soy sauce or coconut aminos
  • 1 tsp sriracha
  • 1/2 tsp sesame oil
  • 1 tsp sesame seeds
  • 12-18 small lettuce leaves fewer if using large leaves

Method
 

  1. In a large skillet, cook ground meat until no pink remains. Remove and drain grease, if any.
  2. Add chopped vegetables, cook until tender. Add garlic and ginger, cook until fragrant. Remove from heat.
  3. Add soy sauce, sriracha, and sesame oil. Mix until combined.
  4. Place lettuce 'cups' on a plate or serving platter. Spoon about 1/8 - 1/4 cup mixture into each 'cup', depending on the size of the cups. Top with a sprinkle of sesame seeds.
